Summer Salad, Macy's photography, & a New England "staycation"

Welcome to the latest RS Enrichment gathering recap. Let's start with the food...
We served a crowd-friendly version of The Cheesecake Factory's BBQ Ranch Chicken Salad...

6 chicken breasts, marinate in Kraft Italian dressing for 1 hour, grill, cut up
romaine, torn
corn
green onions, chopped
jack cheese, shredded
Roma tomatoes, diced
1 lb. bag of black beans, soaked/prepared according to package directions
sour cream (optional)
guacamole or sliced/diced avocados
cilantro, chopped
tortilla chips to crumble on top

Serve as a salad bar

Dressing: 1 part BBQ sauce (we used Sweet Baby Ray's) to 3 parts Ranch. Adjust to your liking.

Cost saving suggestions:
  • Head to your local library for passes to many of New England's attractions. These passes will cut or eliminate cost. Summer reading programs at the library sometimes offer passes for reading incentive as well.
  • Join the Mass Audubon Society for $29 & enjoy discounts to scores of NE attractions.
